Jesús made his Pinots with old world minimal manipulation techniques, including the use of whole cluster fermentation with indigenous yeasts and also sur-lie aging. This is a detail-oriented approach that focuses on making wine that inspires an evocative experience, by achieving a high level of complexity and harmony.
